  • 2 TBSP fresh lime juice
  • 1 + 1/4 cups all-purpose flour
  • 5 graham cracker sheets (crushed)
  • 2 TBSP sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 TBSP coconut oil (melted)
  • 2 eggs
  • Zest of 1 lime

Instructions

  1. In a large bowl, whisk together almond milk, Greek yogurt, and lime juice. Let it thicken for about 5 minutes.
  2. Crush graham cracker sheets into fine crumbs.
  3. In a separate bowl, mix flour, crushed graham crackers, sugar, baking powder, baking soda, and salt.
  4. Preheat your griddle over medium heat and grease with coconut oil.
  5. To the wet mixture, whisk in melted coconut oil and eggs; add lime zest.
  6. Gradually combine dry ingredients with the wet mixture until just mixed (batter should be slightly lumpy).
