  • 4 tablespoons mayonnaise
  • 1/4 cup cooked spinach
  • 2 oz chopped artichokes
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Slice the hard-boiled eggs in half lengthwise and scoop out the yolks into a mixing bowl.
  2. Add mayonnaise, cooked spinach, chopped artichokes, Dijon mustard, garlic powder, grated Parmesan cheese, salt, and black pepper to the yolks.
  3. Mash together with a fork until smooth.
  4. Spoon or pipe the mixture into the egg white halves.
