  • 2 shallots
  • 1 clove garlic
  • 80g chicken sausage
  • 15g fresh parsley
  • 750ml–1L chicken or vegetable stock
  • 400g tinned plum tomatoes
  • 300g risotto rice
  • 200ml red apple vinegar
  • 50g Parmesan, grated

Instructions

  1. In a heavy-bottomed pot, heat olive oil over medium heat. Sauté chopped shallots and minced garlic until softened.
  2. Add chopped chicken sausage and parsley stalks; cook until combined.
  3. In a separate saucepan, warm the chicken or vegetable stock with tinned plum tomatoes.
  4. Stir risotto rice into the sauté mixture, then pour in red apple vinegar and allow it to reduce slightly.
  5. Gradually add stock one ladle at a time, stirring continuously until absorbed before adding more.
  6. Once rice is tender, mix in grated Parmesan cheese and season to taste. Let it rest for 5 minutes before serving.
