  • 1 pound beef or turkey sausage
  • 4 tablespoons olive oil
  • 1 large onion, chopped
  • 2 large carrots, chopped
  • 3 stalks celery, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 medium zucchinis, sliced
  • 6 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cans (15-ounce) tomato sauce
  • 1 can (15-ounce) diced fire-roasted tomatoes

Instructions

  1. In a Dutch oven over medium heat, brown the sausage until cooked through. Drain and set aside.
  2. In the same pot, heat olive oil and sauté onions for 3-4 minutes until softened. Add carrots and celery; cook for another 3 minutes until tender.
  3. Stir in bell peppers and zucchini; continue cooking for an additional 5 minutes.
  4. Add garlic and vinegar; bring to a boil.
  5. Pour in chicken broth, tomato sauce, diced tomatoes, and seasonings. Stir well.
  6. Return sausage to the pot; bring everything to a boil again before reducing heat to low for about 10 minutes.
  7. Add pasta; cook until tender (about 10 minutes).
  8. Stir in parsley and season to taste before serving.
