  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 6 cloves garlic, minced
  • 2 tablespoons Italian seasoning
  • 1 tablespoon tomato paste
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 (15 ounce) can dark red kidney beans, drained and rinsed
  • 4 cups chicken stock
  • 1 cup uncooked ditalini
  • Kosher salt
  • Fresh cracked pepper
  • Grated Parmesan for garnish
  • Fresh chopped parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the ground beef, then remove with a slotted spoon.
  2. In the same pot, sauté diced onion, sliced carrots, and celery for about 5 minutes.
  3. Stir in minced garlic, Italian seasoning, and tomato paste; cook for 1 minute.
  4. Add tomato sauce, diced tomatoes, cannellini beans, dark red kidney beans, chicken stock, ditalini pasta, and the browned beef back into the pot. Season to taste.
  5. Bring to a simmer; reduce heat and cook until pasta is tender (about 5 minutes).
  6. Adjust seasoning as needed and serve garnished with grated Parmesan and parsley.
