  • 20 jumbo pasta shells
  • 1 cup whole milk ricotta cheese
  • 4 cups fresh spinach (cooked and wilted)
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 tsp olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté fresh spinach until wilted (about 3 minutes). Season with salt, pepper, and garlic powder.
  3. In a mixing bowl, combine the cooked spinach with ricotta cheese and grated Parmesan until well mixed.
  4. Generously stuff each shell with the filling and place them upright in a greased baking dish.
  5. Pour marinara sauce over the stuffed shells until fully covered. Sprinkle remaining Parmesan on top.
  6. Preheat the oven to 375°F (190°C) and bake covered with foil for 25 minutes. Remove foil for the last 5 minutes to achieve a bubbly finish.
