Seafood Lasagna is a sumptuous dish that layers creamy ricotta, rich mozzarella, and a delightful mix of fresh seafood between tender no-boil pasta sheets.   • 9 no-boil lasagna noodles
  • 1 cup ricotta cheese (whole milk)
  • 1 cup shredded part-skim mozzarella cheese
  • 1/2 cup grated Parmesan cheese (freshly grated)
  • 2 cups fresh baby spinach
  • 1 cup assorted seafood (shrimp, scallops, crab meat)
  • 28 oz can crushed tomatoes (no added sugar)
  • 3 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Optional: Fresh basil or oregano for seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish with olive oil.
  2. In a saucepan, heat olive oil over medium heat. Sauté garlic until fragrant, then add crushed tomatoes. Season with salt, pepper, and herbs; let simmer.
  3. In a bowl, combine ricotta, half of mozzarella and Parmesan, and fresh spinach. Mix well.
  4. Layer sauce at the bottom of the baking dish followed by noodles, half of the cheese mixture, and assorted seafood. Repeat layers until all ingredients are used.
  5. Top the final layer with remaining sauce and cheeses. Cover with foil and bake for 30 minutes.
  6. Allow to cool slightly before slicing and serving.
