  • 1 lb boneless skinless chicken thighs
  • 2 tbsp fresh thyme, chopped
  • 3 scallions, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp ginger root, grated
  • 1 tsp cayenne pepper (adjust to taste)
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp dark brown sugar
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Gather and prep all ingredients; finely chop scallions and garlic, and grate ginger.
  2. In a large bowl, mix thyme, cayenne pepper, garlic, ginger, and brown sugar until combined.
  3. Add lime juice and soy sauce to the spice mixture; whisk until smooth.
  4. Coat chicken thighs in the marinade; cover and refrigerate for at least one hour.
  5. Preheat grill or oven to 375°F (190°C). Cook marinated chicken for 20-25 minutes until done.
  6. Serve with extra marinade drizzled on top for added flavor.
