  • ½ cup unsalted butter, melted
  • 2 cups fresh blueberries
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 1 tsp agar-agar powder mixed with water (as per package instructions)

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of a springform pan.
  2. Bake the crust for 8-10 minutes until golden brown. Allow to cool.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well.
  4. Stir in vanilla extract and lemon juice until fully incorporated.
  5. Gently fold in fresh blueberries while preserving their shape.
  6. Mix agar-agar powder with water on low heat until dissolved; slowly add to the cream cheese mixture while stirring.
  7. Pour filling onto the cooled crust and spread evenly. Chill for at least four hours or overnight before serving.
