  • 3 boneless, skinless chicken breasts (approximately 1 lb)
  • 4 cups chopped romaine lettuce
  • 1 cup shredded carrots
  • 1 red bell pepper, diced
  • 1 cucumber, thinly sliced
  • 2 tbsp sesame oil
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper and bake for 25-30 minutes until fully cooked. Let cool and shred.
  2. Chop the romaine lettuce into bite-sized pieces. Dice the cucumber and red bell pepper; shred the carrots.
  3. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and optional spices.
  4. In a large bowl, combine shredded chicken with veggies. Pour dressing over and toss to coat.
