  • 4 cups fresh spinach
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup long-grain white rice
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, and draining the artichokes.
