  • pounds stewing beef (cut into 1-inch pieces)
  • 2 large onions (roughly chopped)
  • 5 cloves garlic (minced)
  • 3 tablespoons sweet paprika
  • 1 teaspoon caraway seeds (ground)
  • 1 teaspoon oregano (dried)
  • 3 bay leaves
  • 1 teaspoon brown sugar
  • ½ cup tomato sauce
  • 2 tablespoons balsamic vinegar
  • 4 cups beef broth (no salt added)
  • 2 tablespoons parsley (chopped)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over high heat. Sear the beef in batches until browned on all sides; remove from pan.
  2. In the same skillet, reduce heat to medium-high and sauté onions and garlic until translucent.
  3. Stir in paprika, caraway seeds, oregano, bay leaves, and brown sugar; cook until fragrant.
  4. Add tomato sauce, balsamic vinegar, and beef broth; mix well.
  5. Return seared beef to skillet. Bring to a boil then reduce heat to low and cover tightly. Simmer for about 2 hours until tender.
  6. Adjust seasoning as needed before serving hot with fresh parsley as garnish.
