  • 3 large eggs, room temperature
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon vanilla extract
  • 1 cup whipped cream
  • 2 maraschino cherries
  • 1/4 cup chocolate shavings (or chopped chocolate)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a springform pan and line with parchment paper.
  2. In a bowl, mix melted butter and sugar. Add eggs and vanilla until smooth. Stir in flour, cocoa powder, salt, baking powder, and fold in chocolate chips. Pour into the prepared pan and bake for 20-25 minutes.
  3. Beat softened cream cheese until smooth; gradually add sugar and vanilla. Incorporate eggs one at a time followed by sour cream and heavy cream until well combined.
  4. Pour the cheesecake mixture over the cooled brownie base. Bake at 325°F (163°C) for 55-60 minutes until slightly jiggly in the center.
  5. For the hot fudge sauce: melt chocolate chips with heavy cream and butter over low heat until smooth; stir in vanilla.
  6. Chill the cheesecake for at least four hours or overnight before serving topped with hot fudge sauce, whipped cream, cherries, and chocolate shavings.
