  • 12 tablespoons very cold unsalted butter, diced
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar (for glazing)
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream (for glazing)
  • 1 tablespoon maple syrup

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a food processor, combine flour, sugar, baking powder, chai spice blend, and salt. Pulse to mix.
  3. Add cold butter and pulse until mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together heavy cream, one egg, and egg yolk. Gradually add to dry mixture until a dough forms.
  5. Shape the dough into a disc, wrap in plastic wrap, and chill in the freezer for about 30 minutes.
  6. Roll out the dough on a floured surface to about an inch thick. Cut into wedges or desired shapes.
  7. Brush with egg wash made from the reserved egg white and bake for 20–22 minutes until golden brown.
  8. For the glaze: Whisk together powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
  9. Once cooled, dip each scone in the glaze and allow to set before serving.
