  • 2 cups fresh blueberries
  • 3 tablespoons sugar
  • 1 1/2 tablespoons cornstarch
  • Pinch of salt
  • 2 teaspoons fresh lemon juice
  • 1 package pie crust (2 in a pack)
  • 1 egg
  • 1 tablespoon water
  • 3/4 cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Prepare the Filling: Cook blueberries in a medium saucepan over medium heat until soft. Stir in sugar, cornstarch, and salt; cook until thickened. Remove from heat and add lemon juice.
  2. Preheat Oven: Set oven to 425°F (220°C) and line cookie sheets with parchment paper.
  3. Prepare Dough: Cut dough into circles using a cutter about 3 1/2" in diameter. Place half on parchment paper and add 1 tablespoon of filling on each.
  4. Assemble Pies: Top with remaining circles, crimp edges to seal, and make slits for ventilation.
  5. Bake: Brush tops with egg wash and bake for about 20 minutes until golden brown.
  6. Glaze: Drizzle cooled pies with a mixture of powdered sugar and milk.
