  • 1/3 cup butterscotch chips, melted
  • 1/2 cup buttermilk
  • 1 1/2 cups unsalted butter for buttercream
  • 1 cup butterscotch chips for buttercream
  • 2 1/4 cups powdered sugar
  • 3/4 teaspoon butter extract for buttercream
  • 1/2 teaspoon vanilla for buttercream
  • 1/4 cup butterscotch chips for ganache
  • 1 tablespoon heavy cream
  • 1/2 tablespoon honey

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream softened butter with sugars until fluffy. Beat in eggs one at a time, then mix in vanilla.
  3. In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add this dry mix to the wet ingredients alternating with butterscotch broth.
  4. Spoon batter into liners, filling each about two-thirds full. Bake for 15 minutes or until a toothpick comes out clean. Cool before frosting.
  5. For the frosting, beat butter until creamy; mix in melted butterscotch chips and powdered sugar until fluffy.
  6. For the ganache, melt butterscotch chips with cream in short bursts in the microwave; stir until smooth.
  7. Frost cupcakes generously and drizzle with warm ganache.
