Halloween Slime Cupcakes are a delightful way to celebrate the spookiest season of the year.   • 175 g Baking spread (or unsalted butter) (softened, unsalted)
  • 175 g Caster sugar
  • 3 Eggs (large)
  • 2 tsp Vanilla extract
  • 175 g Self raising flour
  • 25 g Black food colouring
  • 200 g Butter (softened, unsalted)
  • 400 g Icing sugar
  • 1 tsp Vanilla extract
  • 12 tbsp Milk
  • Green food colouring
  • Yellow food colouring
  • 150 g Tinned custard
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with cases.
  2. In a mixing bowl, beat the baking spread and caster sugar until smooth. Add eggs one at a time along with vanilla extract, mixing well after each addition.
  3. Gently fold in self-raising flour until no lumps remain, then mix in black food coloring.
  4. Divide the batter among the lined cases and bake for 25–30 minutes or until a skewer comes out clean. Cool on a wire rack.
  5. Once cooled, use a corer to remove some cake from the center and fill it with colored tinned custard.
  6. For the buttercream, beat together softened butter and icing sugar before adding vanilla extract, milk, and food coloring until bright green. Frost each cupcake generously.
  7. Decorate with candy eyes and sprinkles.
