  • 2 large Egg Whites (Room Temperature)
  • 1/4 tsp Cream of Tartar
  • 1/2 cup White Sugar
  • 1 stick Unsalted Butter (softened)
  • 2 cups Confectioner’s Sugar
  • 2 tbsp Milk
  • Purple Gel Food Coloring
  • Black Decorating Frosting

Instructions

  1. Preheat oven to 200°F and line a baking sheet with parchment paper.
  2. In a bowl, beat room-temperature egg whites with cream of tartar until foamy.
  3. Gradually add sugar while increasing mixer speed until stiff peaks form.
  4. Pipe mounds onto the baking sheet for ghosts and bake for 2 hours.
  5. Meanwhile, prepare buttercream by mixing softened butter, confectioner’s sugar, milk, and food coloring until smooth.
  6. Frost cooled cupcakes with purple buttercream and decorate meringue ghosts with black frosting for eyes and mouths.
  7. Assemble by placing meringue ghosts on frosted cupcakes.
