- 8 basil leaves (fresh)

- 10 Balls fresh mozzarella (bocconcini, ciliegine, “cherry sized”)
- 5 black olives (whole pitted, medium or large)
- ½ Pound chicken breast (sliced thinly)
- 1 ½ Ounces balsamic glaze
- 8 ½ Ounces sun-dried tomatoes (packed in oil, julienne cut)

- Gather all ingredients and rinse the basil leaves.
- Slice the chicken thinly if not pre-sliced.
- On a serving platter, place a mozzarella ball and pierce it with a toothpick.
- Wrap each mozzarella ball with a slice of chicken to create an 'eyeball.'
- Top with a black olive as the 'pupil.'
- In a mixing bowl, combine olive oil, basil, and salt; drizzle over the assembled eyeballs.
- Finish with balsamic glaze and scatter sun-dried tomatoes around the platter.
- Chill in the fridge until ready to serve.
