  • 4 boneless, skinless chicken breasts or thighs
  • ¼ cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 large fresh pineapple, peeled and cut into chunks

Instructions

  1. In a mixing bowl, whisk together soy sauce, olive oil, honey, garlic, and ginger.
  2. Place chicken in a resealable bag and pour the marinade over it. Seal tightly and refrigerate for at least 30 minutes (overnight is best).
  3. Cut pineapple into thick slices or chunks.
  4. Preheat grill to medium-high heat.
  5. Grill chicken for about 6–7 minutes on each side until fully cooked through; grill pineapple for about 3–4 minutes per side until caramelized.
  6. Brush leftover marinade onto chicken during grilling.
  7. Let chicken rest for 5 minutes before serving.
