  • 5g (1 teaspoon) baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 150g (¾ cup) granulated sugar
  • 3 large eggs
  • 120ml (½ cup) olive oil
  • 120ml (½ cup) freshly squeezed orange juice
  • Zest of 1 orange
  • 5ml (1 teaspoon) vanilla extract
  • 150g (¾ cup) granulated sugar (for syrup)
  • 120ml (½ cup) water (for syrup)
  • 1 cinnamon stick (for syrup)
  • 5ml (1 teaspoon) lemon juice (for syrup)

Instructions

  1. Preheat oven to 175°C (350°F). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together ground almonds, flour, baking powder, cinnamon, and salt.
  3. In another bowl, beat sugar, eggs, and olive oil until smooth. Stir in orange juice, zest, and vanilla extract.
  4. Gradually fold the dry mixture into the wet ingredients until just combined.
  5. Pour batter into the prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
  6. While baking, combine syrup ingredients in a saucepan over medium heat. Simmer until sugar dissolves; cool slightly.
  7. After baking, let the cake cool for about 10 minutes in the pan before pouring warm syrup over it.
  8. Allow to cool before slicing and serving.
