  • 5 cups all-purpose flour
  • 1/2 cup sugar
  • 2.5 tsp salt
  • 1/4 cup sourdough starter
  • 1 cup water
  • 1/2 cup milk
  • 2.5 oz unsalted butter (melted and cooled to room temperature)
  • 1/2 tsp almond essence
  • 1/2 tsp yeast
  • green food coloring
  • 12 oz unsalted butter (for filling)
  • 3 tbsp chopped pistachios (finely crushed into 1/8-inch bits)
  • 2 cups milk
  • 1/3 cup sugar
  • 4 tbsp cornstarch
  • 2 egg yolks
  • 2 tsp vanilla essence
  • 1/4 tsp salt
  • 4 tbsp pistachio paste
  • 1 egg yolk
  • 1 tbsp cream

Instructions

  1. In a stand mixer, combine flour, sugar, salt, water, milk, melted butter, sourdough starter, almond essence, yeast, and green food coloring until smooth.
  2. Knead the dough for about 10 minutes until elastic. Let it rise in a warm area until doubled (about 6 hours).
  3. Prepare the butter layer by flattening it between parchment paper and chilling.
  4. Roll out the dough into a rectangle and encase the chilled butter. Roll out again and fold to laminate.
  5. Cut triangles from the dough and roll into croissants.
  6. Place on lined baking sheets to rise before baking at 400°F (200°C) for about 25 minutes.
