  • 1 teaspoon cinnamon

  • 1/8 teaspoon ground cloves
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter
  • 1 cup (packed) brown sugar
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses
  • 1/3 cup white sugar
  • 1/2 cup unsalted butter (for frosting)
  • 3/4 cup vegan marshmallows cream
  • 1/4 teaspoon salt (for frosting)
  • 11 1/2 cup powdered sugar
  • 1 tablespoon milk (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, ground ginger, cinnamon, baking soda, nutmeg, ground cloves, and salt.
  3. In another bowl, cream unsalted butter and brown sugar until light and fluffy. Add the vanilla extract; mix well.
  4. Gradually blend the dry mixture into the wet mixture and stir in molasses until smooth.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet and bake for about 10 minutes until edges are set but centers remain soft. Cool on wire racks.
  6. For the frosting, beat softened butter until creamy. Mix in vegan marshmallows cream and salt before gradually adding powdered sugar to desired sweetness; thin if necessary with milk.
  7. Once cooled, spread frosting on half of the cookies and sandwich with remaining cookies.
