  • 1 lb chicken breasts (skinless, boneless, sliced)
  • 2 tablespoons olive oil
  • 5 cloves garlic (minced)
  • 2 zucchini (medium, sliced)
  • 1.5 cups corn kernels (cooked)
  • 4 tablespoons butter (divided)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • black pepper (to taste)
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 cup fresh cilantro (chopped)

Instructions

  1. Prep all ingredients by slicing zucchini and mincing garlic.
  2. Heat olive oil in a skillet over medium-high heat; add chicken breasts.
  3. Season chicken with smoked paprika, chili powder, salt, and pepper; cook until golden brown (6-7 minutes each side). Remove from skillet.
  4. In the same skillet, sauté zucchini for about 3-4 minutes; add corn kernels.
  5. Return chicken to the skillet; add minced garlic and half of the butter. Stir to combine.
  6. Drizzle lime juice over the mixture and garnish with chopped cilantro before serving.
