Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter (softened)
  • 1 cup chocolate batons or semi-sweet chocolate
  • 1 tbsp milk (for egg wash)
  • Confectioners’ sugar (for garnish)

Instructions

  1. In a stand mixer bowl, mix flour, sugar, salt, and yeast. Gradually add cold milk until a shaggy dough forms; knead until smooth.
  2. Roll softened butter into a rectangle between parchment paper and chill.
  3. Roll dough into a large rectangle, encase chilled butter, and laminate by folding and rolling several times while chilling in between.
  4. Roll out dough again, cut into triangles, place chocolate at the base, and roll tightly.
  5. Allow shaped croissants to rise until doubled in size before brushing with milk and baking at 400°F for 15–20 minutes.
