  • 2 lbs. organic lamb rib chops
  • 6 garlic cloves, crushed
  • 2 fresh thyme sprigs
  • 1 cup premium pomegranate juice
  • 2 Tbsps extra virgin olive oil
  • 2 Tbsps unsalted butter
  • Cornstarch (for thickening)

Instructions

  1. In a mixing bowl, combine olive oil, crushed garlic, thyme, salt, pepper, garlic powder, and dried parsley to create the marinade.
  2. Coat the lamb chops thoroughly in the marinade. Allow to marinate for at least 20 minutes.
  3. Heat a skillet over medium-high heat and sear each side of the lamb chops for about 3-4 minutes until golden brown.
  4. In a separate saucepan, melt butter and combine with ½ cup pomegranate juice. Thicken with cornstarch slurry.
  5. Once cooked through (145°F internal temperature), drizzle the sauce over the chops and serve.
