  • 1/4 tsp ground ginger
  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 15oz can pumpkin puree
  • 2/3 cup water
  • 1 tsp vanilla extract
  • 1/2 cup butter, cold and cubed
  • 3/4 cup all purpose flour
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8×4 bread pans.
  2. In a large bowl, whisk together flour, salt, baking soda, and spices.
  3. Mix in granulated and brown sugars until well combined.
  4. Add canola oil and mix until incorporated; then add eggs one at a time.
  5. Stir in pumpkin puree, water, and vanilla until smooth.
  6. Divide batter between the prepared pans.
  7. For the crumb topping, combine cold cubed butter with flour and brown sugar until crumbly; sprinkle on top of the batter.
  8. Bake for 55-65 minutes or until a toothpick comes out clean from the center.
  9. Cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
