  • 1 cup shelled pistachios (unsalted)
  • 1/4 cup powdered sugar
  • 2 tablespoons butter (softened for filling)
  • 1 teaspoon vanilla extract
  • 4 ounces dark chocolate
  • 2 tablespoons butter (for chocolate)
  • Optional garnishes: chopped pistachios, additional powdered sugar, honey

Instructions

  1. Prepare the pistachio filling by blending pistachios in a food processor until finely ground. Mix in powdered sugar, softened butter, vanilla extract, and a pinch of salt until smooth. Chill for 15 minutes.
  2. Melt the dark chocolate and remaining butter in a microwave-safe bowl, stirring every 30 seconds until smooth.
  3. Preheat the oven to 350°F (175°C).
  4. Slice each croissant horizontally without cutting all the way through. Spread 1–2 tablespoons of pistachio filling inside and drizzle with melted chocolate.
  5. Close the croissants carefully and place them on a parchment-lined baking sheet. Brush with beaten egg if desired.
