  • 1 pound ground turkey (93/7)
  • 2 tablespoons olive oil
  • 1/2 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1 large egg
  • 1/3 cup breadcrumbs
  • 1 tablespoon ketchup (for meatloaf)
  • 1/4 cup ketchup (for glaze)
  • 1 tablespoon chili sauce
  • 1 tablespoon maple syrup

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a sauté pan, heat one tablespoon of olive oil over medium heat, then cook diced bell peppers and onions until soft (3-4 minutes). Set aside to cool.
  3. In a mixing bowl, combine ground turkey, egg, breadcrumbs, ketchup, remaining olive oil, mustard, Worcestershire sauce, garlic powder, Italian seasoning, salt, and pepper. Gently mix in cooled vegetables.
  4. Shape the mixture into 4-5 mini loaves and place them on the baking sheet.
  5. For the glaze, whisk together all glaze ingredients and brush it over each meatloaf.
  6. Bake for 20-25 minutes until the internal temperature reaches 165°F. Rest for at least 5 minutes before serving.
