1/2 teaspoon salt
3/4 cup white sugar
1/2 cup softened unsalted butter
1 tablespoon grated orange peel
1 large egg
1/2 cup fresh-squeezed orange juice
1 cup powdered sugar
Grated peel from 1/2 orange
1–2 tablespoons fresh-squeezed orange juice for icing
1 tablespoon melted unsalted butter
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine flour, baking powder, and salt; set aside.
In another bowl, cream together softened butter and sugar until light and fluffy. Add grated orange peel, egg, and fresh orange juice; mix until well combined.
Gradually add the dry ingredients to the wet mixture until just combined.
Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
Bake for about 10 minutes or until the edges are golden brown. Cool on the baking sheet for a few minutes before transferring to a cooling rack.
For icing, whisk together powdered sugar, grated orange peel, fresh orange juice, and melted butter until smooth. Drizzle or spread over cooled cookies.
