  • 4 ounces Cream Cheese
  • 1/4 cup Coconut Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 pound Ground Beef
  • 2 tablespoons Taco Seasoning
  • 4 pieces Low-Carb Tortillas
  • 1 cup Greek Yogurt
  • 1 cup Lettuce
  • 1 medium Tomato
  • 1 cup Extra Cheddar Cheese
  • 1/4 cup Cilantro
  • 1/2 cup Jalapeño Slices
  • 1 tablespoon Olive Oil

Instructions

  1. In a non-stick skillet over medium heat, melt the butter and brown the ground beef. Stir in taco seasoning, cream cheese, coconut cream, and shredded cheddar until melted.
  2. Take a low-carb tortilla and spread Greek yogurt in the center. Layer with shredded lettuce, diced tomato (or bell peppers), jalapeño slices, and the meat mixture. Top with extra cheddar cheese and cilantro.
