  • 2 cups fresh broccoli florets
  • 2 cups fresh cauliflower florets
  • 1 cup plain Greek yogurt
  • 1/2 cup mayonnaise
  • 2 tbsp honey or maple syrup
  • 2 tbsp lemon juice (freshly squeezed)
  • 1/2 cup dried cranberries
  • 1/4 cup sunflower seeds or chopped nuts

Instructions

  1. Wash and cut broccoli and cauliflower into bite-sized florets.
  2. Blanch broccoli in salted boiling water for 2 minutes, then add cauliflower for another 2 minutes. Drain and cool in an ice bath.
  3. In a bowl, mix Greek yogurt, mayonnaise, honey/maple syrup, and lemon juice until smooth.
  4. Toss blanched vegetables with cranberries and sunflower seeds/nuts in a large bowl.
  5. Pour dressing over the salad, mixing gently until well-coated.
  6. Chill for at least an hour before serving. Garnish with extra seeds/nuts if desired.
