  • 1 lb (450g) boneless chicken breast, thinly sliced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 2 tbsp soy sauce
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup snap peas
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tsp cornstarch, mixed with 2 tbsp water
  • Sesame seeds for garnish

Instructions

  1. Marinate thinly sliced chicken breast with salt, pepper, and 1 tablespoon of soy sauce; set aside.
  2. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Cook chicken until browned and cooked through, then remove from the pan.
  3. Sauté minced garlic and grated ginger until fragrant.
  4. Add julienned carrots and broccoli, cooking for about 2 minutes.
  5. Incorporate sliced bell peppers and snap peas; stir-fry until crisp-tender.
  6. Return chicken to the wok; add remaining soy sauce and thicken with cornstarch mixed with water.
  7. Toss everything together until well combined; serve immediately.
