  • 170 g all-purpose flour
  • 80 g brown sugar
  • 90 g cold unsalted butter
  • 400 g dried figs
  • 1 cup water
  • 40 g granulated sugar
  • 3 tbsp fresh lemon juice
  • 170 g cream cheese
  • 1 tsp vanilla extract
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, brown sugar, and salt. Cut in the cold butter until crumbly, then press into the bottom of a baking pan.
  3. For the filling, combine dried figs, water, granulated sugar, and lemon juice in a saucepan. Boil until figs are tender; cool slightly before blending until smooth.
  4. In another bowl, beat cream cheese, vanilla extract, egg, and remaining sugar until creamy. Spread over the crust.
  5. Pour fig filling over the cream cheese layer and bake for about 30 minutes until set. Cool completely before cutting into bars.
