  • 18 oz all-purpose flour (about 4 cups)
  • ¼ cup + 1 Tbsp granulated sugar
  • 2½ tsp fine sea salt
  • 1 Tbsp + 1/2 tsp instant yeast
  • ½ cup + 2 Tbsp cold water
  • ½ cup + 2 Tbsp cold whole milk
  • 3 Tbsp unsalted butter (softened)
  • 1¼ cups cold unsalted butter (European-style)
  • For egg wash: 1 large egg, 1 egg yolk, pinch of salt

Instructions

  1. In a mixing bowl or stand mixer, combine flour, sugar, salt, and yeast. Gradually add cold water and milk until a dough forms. Knead for about 5 minutes until smooth; let rest for 30 minutes.
  2. Shape softened butter into a rectangle between parchment paper. Roll out the dough into a rectangle on a floured surface and place the butter in the center. Fold over edges to seal.
  3. Roll out the dough into an elongated rectangle. Fold and refrigerate for at least 30 minutes; repeat this process three times for flaky layers.
  4. Roll out one last time into a large rectangle. Cut triangles from the dough and roll each from base to tip to form croissants. Place on baking sheet lined with parchment.
  5. Allow croissants to rise until doubled in size (about 1 hour). Preheat oven to 400°F (200°C). Brush with egg wash before baking for about 20 minutes until golden brown.
