  • 3.5 cups vegetable broth
  • 1 medium jalapeño pepper
  • 1 cup corn
  • 3/4 cup dried red lentils
  • 15 ounces tomato sauce
  • 1 medium bell pepper
  • 3/4 cup salsa
  • 15 ounces black beans
  • 15 ounces red beans
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/2 cup cream cheese
  • Salt
  • Pepper
  • Crushed tortilla chips
  • Sliced avocado
  • Sour cream
  • Diced jalapeños
  • Chopped red onion
  • Shredded cheddar
  • Fresh cilantro

Instructions

  1. Wash and chop all vegetables.
  2. In a skillet over medium heat, sauté chopped onions in olive oil until translucent; add jalapeño until fragrant.
  3. Transfer sautéed mixture to a slow cooker along with vegetable broth, corn, lentils, tomato sauce, bell pepper, salsa, black beans, red beans, and spices.
  4. Set the slow cooker on low and cook for 6–8 hours until lentils are tender.
  5. About 30 minutes before serving, stir in cream cheese until melted; adjust seasoning as needed.
  6. Serve garnished with toppings of choice.
