  • 1 small onion, diced

  • 4 cups low-sodium beef broth
  • 3 cups potatoes, diced
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • Diced tomatoes (optional topping)
  • Chopped green onions (optional topping)
  • Crispy Turkey Bacon bits (optional topping)
  • Extra shredded cheese (optional topping)
  • Sour cream (optional topping)

Instructions

  1. In a large skillet over medium heat, brown 1 lb ground beef until fully cooked; drain excess grease.
  2. Sauté 1 diced onion and 2 minced garlic cloves in the same skillet for 2–3 minutes until fragrant.
  3. Add cooked beef, 4 cups low-sodium beef broth, 3 cups diced potatoes, 2 cups diced carrots, 2 cups diced celery, 1 can diced tomatoes (undrained), 1 tablespoon Worcestershire sauce, dried basil, oregano, salt, and pepper to your slow cooker; mix well.
  4. Cook on low for 6–8 hours or high for 3–4 hours until vegetables are tender.
  5. About 30 minutes before serving, stir in 2 cups shredded cheddar cheese and 1 cup heavy cream until melted.
  6. Taste and adjust seasoning as needed before serving.
