  • 6 egg yolks
  • 1 cup granulated sugar (plus extra for rolling and topping)
  • 1/8 tsp salt
  • 1 1/2 tbsp vanilla bean paste
  • 3 1/2 tbsp cornstarch
  • 3 tbsp unsalted butter
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 egg

Instructions

  1. Prepare the vanilla pastry cream by heating milk with half of the sugar and salt in a saucepan. In a separate bowl, whisk egg yolks with remaining sugar, cornstarch, and vanilla until smooth. Gradually combine mixtures over heat until thickened, then stir in butter and cool.
  2. Preheat oven to 350°F (175°C). Cream butter and sugar in a large bowl; add egg and vanilla. In another bowl, mix flour, baking powder, and salt before combining with wet ingredients.
  3. Scoop dough onto parchment-lined baking sheets and create indentations for the pastry cream filling. Fill each indentation.
  4. Bake for about 9 minutes until edges are golden. Cool slightly before sprinkling with sugar.
  5. Caramelize sugar using a kitchen torch or broiler until bubbly.
