  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • 1 cup pineapple, cubed
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown, about 6-8 minutes. Remove from pan and set aside.
  2. In the same skillet, sauté chopped onion, minced garlic, and diced red bell pepper until softened (about 5 minutes). Add cubed pineapple and cook for an additional 2 minutes.
  3. Stir in jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Bring to a boil; reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is tender.
  4. Return cooked chicken to the skillet and mix well. Serve hot garnished with sliced green onions and sesame seeds.
