  • 2 rings (13 ounces each) turkey sausage, sliced into ¼-inch pieces
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped
  • 2 medium carrots, diced
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 cans Great Northern white beans, rinsed and drained
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium-high heat, heat vegetable oil. Add turkey sausage and brown for about 7–9 minutes. Remove and set aside.
  2. In the same pot, melt butter and sauté onions, carrots, garlic, salt, and pepper until soft (10–12 minutes).
  3. Sprinkle flour over the mixture and stir for another minute.
  4. Gradually add chicken broth and whole milk while stirring; bring to a simmer.
  5. Return turkey sausage to the pot along with the white beans; reduce heat to medium-low.
  6. Simmer while stirring occasionally until thickened (15–20 minutes). Serve warm.
