  • 1 cup pumpkin puree
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup coconut oil
  • 1/4 cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt (optional and to taste)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, mix egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, and spices until combined.
  3. Fold in flour, baking powder, baking soda, and salt until just mixed.
  4. Pour two-thirds of the batter into the prepared pan.
  5. In another bowl, blend cream cheese with sugar and flour until smooth; spread over the batter.
  6. Top with remaining batter and bake for about 48 minutes until golden and a toothpick comes out clean.
  7. Let cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
