  • 1½ cups cherry tomatoes (halved)
  • ½ cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • Optional: crumbled feta cheese and Italian dressing

Instructions

  1. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt until well combined.
  2. Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the corn and cook for about 5 minutes until tender.
  3. In a large mixing bowl, combine the cooked corn with halved cherry tomatoes, finely chopped cucumber, and minced basil.
  4. Allow the salad to chill in the refrigerator before serving. Drizzle with dressing just before serving and sprinkle with optional feta cheese.
