  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 Tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • ¾ cup chopped Oreo cookies
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream
  • Additional chopped Oreo cookies, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with flour.
  2. In a mixing bowl, beat softened butter and sugar until fluffy. Add vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture alternating with milk until smooth. Fold in chopped Oreo cookies.
  4. Divide the batter between the prepared pans and bake for 30 minutes or until a toothpick comes out clean. Let cool completely.
  5. Assemble by placing one layer on a platter, spreading half of the softened ice cream on top, then adding the second layer of cake.
  6. Spread whipped cream over the top and garnish with more chopped Oreo cookies. Freeze for at least 4 hours before serving.
