  • 200ml coconut milk
  • 80g mascarpone
  • 120ml heavy cream
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Vegan gelatin sheets (4g)
  • 80g powdered sugar
  • Grated coconut
  • Gooey Cocoa Spread
  • A pinch of sea salt
  • 1/2 sachet baking powder
  • 3 egg yolks

Instructions

  1. Whip together heavy cream and mascarpone in a cold bowl until soft peaks form. Gradually add powdered sugar and chill.
  2. Soak vegan gelatin sheets in cold water for 5 minutes. Warm coconut milk, dissolve gelatin, then cool slightly and fold into whipped mixture.
  3. Pour mousse into hemisphere molds, adding cocoa spread in the center before freezing for at least 6 hours.
  4. Prepare cocoa shortbread by mixing ingredients to form a dough, chilling it, rolling out, cutting circles, and baking at 180°C for about 10 minutes.
  5. Assemble by placing mousse domes on cooled shortbreads and garnishing with grated coconut.
