  • 5 Bok Choy Leaves
  • 2 Green Onions
  • 1 Tablespoon Oil
  • 1 Tablespoon Ginger + Garlic (combined)
  • 1 Star Anise
  • 1 Bay Leaf
  • 1 Cinnamon Stick
  • 5 cups Broth (or Stock)
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Rice Vinegar
  • Juice of one Lime

Instructions

  1. Wash and slice bok choy leaves into bite-sized pieces; chop green onions, keeping bulbs and stalks separate.
  2. Heat oil in a large pot over medium heat; sauté white onion parts until soft.
  3. Remove from heat briefly to add the ginger-garlic mixture; stir back on heat.
  4. Add sliced bok choy and sauté for about one minute until slightly wilted.
  5. Toss in star anise, bay leaf, and cinnamon stick; pour in broth.
  6. Add soy sauce and rice vinegar to taste; mix well.
  7. Bring to a boil, then reduce heat and simmer for about 8–10 minutes.
  8. Stir in lime juice before serving; discard whole spices.
  9. Ladle soup into bowls and garnish with green onion stalks and optional toppings.
