  • 1 1/2 lbs skin-on deboned chicken thighs
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 4 tablespoons cilantro (finely chopped)
  • 2 tablespoons lime juice
  • 1 teaspoon red chili flakes
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C). In a mixing bowl, whisk together olive oil, minced garlic, chopped cilantro, lime juice, red chili flakes, and salt.
  2. Add the chicken thighs to the marinade and stir to coat evenly. Allow the chicken to marinate for at least 15 minutes.
  3. Heat a cast iron skillet over medium-high heat and sear the chicken skin-side down until browned. Flip and sear the other side.
  4. Transfer the chicken to a baking dish, spoon remaining marinade over it, and bake for 20 minutes until fully cooked.
  5. Serve garnished with fresh lime wedges and additional chopped cilantro.
