  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon instant yeast
  • 3/4 cup unsalted butter (cold)
  • 3/4 cup warm milk
  • 1 large egg (for egg wash)
  • 1 cup dark chocolate chips or batons

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually mix in warm milk until dough forms. Knead briefly until smooth.
  2. Shape dough into a rectangle, wrap in plastic, and refrigerate for at least 30 minutes.
  3. For the butter block: pound cold butter between parchment sheets into a rectangle; refrigerate until firm.
  4. Roll chilled dough into a rectangle, place butter block in center, fold edges over to seal. Roll into a long rectangle and fold like a letter. Repeat chilling and folding two more times.
  5. Roll dough out again; cut into triangles. Place chocolate at wide end and roll up to form croissants.
  6. Let shaped croissants rise for 1 to 1.5 hours until doubled in size.
  7. Preheat oven to 400°F (200°C). Brush with beaten egg and bake for 15-20 minutes until golden.
