  • 2 cups shredded cooked chicken breast
  • 4 cups cooked rotini (about 3 cups dry)
  • 1 cup fresh snow peas
  • ½ cup diced red bell pepper
  • ½ cup shredded carrot
  • 2 cups chopped napa cabbage
  • ¼ cup sliced green onions
  • 8 ounce can sliced water chestnuts (drained)
  • ⅔ cup plain yogurt
  • ¼ cup soy sauce
  • Honey (to taste)
  • Salt (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C) and toast sesame seeds on a baking sheet for about 5 minutes until golden brown.
  2. In a large mixing bowl, combine shredded chicken, cooked rotini, snow peas, red bell pepper, carrot, napa cabbage, green onions, water chestnuts, and chow mein noodles.
  3. In a separate bowl, mix together yogurt, soy sauce, mayonnaise, black pepper, ground ginger, honey (to taste), and salt until well blended.
  4. Pour the dressing over the salad mixture and toss gently to coat evenly. Sprinkle with toasted sesame seeds before serving.
