  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon hot water, plus more if needed
  • 2 blocks (8-ounce) cream cheese, room temperature
  • ½ cup granulated sugar
  • 1 pinch salt
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch square baking pan by greasing it and lining it with parchment paper.
  2. Melt butter and 1 cup of chocolate chips in a microwave-safe bowl until smooth. Whisk in cocoa powder, sugars, eggs, coffee, and vanilla until combined. Stir in flour and salt until just mixed; reserve some batter.
  3. Bake the brownie base for 20-30 minutes based on desired fudginess.
  4. Prepare the cheesecake topping by beating cream cheese, sugar, and salt until smooth; add eggs one at a time followed by vanilla.
  5. Pour cheesecake mixture over baked brownies and swirl reserved brownie batter on top gently.
