  • 1 ¾ cups whole milk
  • 6 chai tea bags
  • 2 cloves
  • 1 stick cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon allspice
  • 3 teaspoons powdered Vegan gelatin (unflavoured)
  • ⅓ cup white granulated sugar
  • 1 ½ cups thickened cream
  • 1 teaspoon vanilla extract
  • pinch of salt
  • ¼ cup white granulated sugar for toffee
  • 1 tablespoon water for toffee
  • 1 tablespoon pistachios, roughly chopped for toffee

Instructions

  1. Infuse 1 cup of whole milk with chai tea bags and spices in a saucepan over medium heat until just below boiling; steep for 10 minutes.
  2. Dissolve vegan gelatin in the remaining milk in a separate bowl.
  3. Remove tea bags and spices; add heavy cream and vanilla to the warm milk mixture.
  4. Whisk in the dissolved vegan gelatin until combined.
  5. Pour into serving glasses and refrigerate for at least 4 hours until set.
  6. For toffee, heat sugar and water in a saucepan until golden brown; stir in chopped pistachios and let cool before breaking into pieces.
  7. Top panna cotta with pistachio toffee before serving.
